Sunday Kale warm salad



Makes/Yield: 1

Ingredients
  • 1 clove garlic
  • 1/4 Red Bell Pepper
  • 2-3 TBS olive oil
  • 2 TBS pine nuts or walnuts
  • 2 TBS raisins or cranberries
  • 2 cups Kale

Steps
  1. Sauté chopped garlic and mince red pepper in olive oil until soft
  2. Add kale and toss just until covered in oil and warm (a minute or two)
  3. Add pine nuts and raisins, salt lightly, serve warm


Great treat and you get that yummy Kale!

Jelly Salad



Jelly Salad

Aptly named  the Jelly Salad because you use a bit of jelly in the dressing for a fruity sweetness.  The creamy Havarti cheese and the apples go nicely together.

Ingredients:
Head of green leaf or red leaf lettuce
Walnuts
Scallion optional
Havarti cheese cubed
Half to whole Apple cubed

Dressing:
3-4 tbs mayo
2 tbs olive oil
Big spoon jam, raspberry or berry

The post-Christmas turkey salad


I am so over Christmas but still had turkey so I came up with this salad which will not remind you of Christmas. Kind of a kitchen sink salad but it turned out good enough to share. Mix dressing ingredients in your bullet or blender, toothpick the zucchini, toss everything together and enjoy. It has a clean fresh taste to help you recover from the Christmas treats.

Ingredients:

Green leaf lettuce
Zucchini 1/2
2 scallions
Handful of pecans
1/4-1/2 cup of shredded turkey
Dressing- handful of cilantro
Dressing- 2 tbs olive oil
Dressing- juice of half a lime
Dressing-1 tbs honey or agave nectar

Ah the most wonderful salad.  We love 'em.  They are crunchy and creamy, spicy and savory.  There are so many varieties from the petite side dish to the full blown meal. This blog is dedicated to the beauty that is the Salad.
